Baked Tilapia Dinner

For dinner tonight we have baked tilapia, fettuccini, and glazed carrots! This came out sooo yummy and I will definitely be making it again.



Start by preheating the oven to 400 degrees F


In a tray massage both sides of tilapia with salt, pepper, and a dash of paprika. You'll notice a lot of my recipes don't have crazy precise measurements... that's because I don't use precise measurements when I cook lol. I promise everything turns out really good!



Melt about 5 tbsp of butter along with a dash of lemon juice. I love to go heavy on the juice...


Pour the butter mixture on top of the tilapia and make sure they're fully covered


Before you put the tilapia in the oven, boil your pasta water in a pot and make sure the water is salted!


Once the water is boiled, put the tilapia in the oven and cook for 15-20 minutes


Drop the fettuccini into the water and cook for 12-13 minutes, strain


Add the pasta back into the pot with a little bit of pasta water


Put a pad of salted butter in the pot and stir


Let the two dishes cool slightly and then start cooking the carrots


Slice carrots to make them thin and add into a skillet with a little bit of oil


Drizzle with soy sauce, mix, and cover until cooked the way you like them


Tada! You have a delicious dinner! This was so easy to make and absolutely delicious. Feel free the sub the meat with another protein. One of my favorite vegan options are jackfruit crab cakes mmmm but roasted garbanzo beans would be really tasty too! Enjoy :)
