diy girls night dinner

i had work off today so i decided to get creative and cook something delicious. i've wanted to make dumplings for the LONGEST time but i've never had the guts to do it. i also assumed they would be pretty difficult to make... but i was pleasantly surprised! all the food turned out delicious and wasn't hard to put together.


appetizer: fluffy dumplings


combine for dough

2 1/2 c flour

1/2 tsp active yeast

2 tsp sugar

3/4 cup & 2 tbsp warm water


knead dough, cover, and let rise in a warm place for 1 1/2 hours


combine for filling

1/2 lb ground pork

1/2 lb ground chicken

2 tsp chopped garlic

3 tsp ginger paste

2 chopped green onions

1 tbsp rice wine

1 tbsp fish sauce

2 tsp soy sauce

3 tbsp hoisin sauce

1 tsp sesame oil

salt & pepper


after the dough has risen, roll it out into a tube and divide the dough into 2 oz pieces. the recipe i took inspo from made it look so easy but i messed this part up big time LOL. we had to make two separate batches of small vs big dumplings. i have to say, both were delicious, but the ratio of meat to dough on the big dumplings was just sooo damn good.


roll out the dough flat and even so it forms a sand dollar-like circle. add a scoop of filling in the middle and wrap the pinch the dough around it so it creates a bun shape. as you can tell, mine turned out WACK. but we tried! not crazy awful for the first attempt AND they tasted good in the end.

arrange the dumplings into an 8" cast iron skillet and set heat to high. cover the dumplings 3/4 of the way with water. keep covered for 8 minutes. if the water needs to evaporate more, take the lid off a bit to let it completely steam off. mine took about 10-12 minutes.

dessert: chocolate covered strawberries


this dessert is so yummy and easy to make. melt 2 cups of milk chocolate chips in a large steel bowl over a pot of boiling water. wash fresh strawberries and lay them on a tray with parchment paper. dip strawberry into the chocolate so it coats it completely. freeze for 30-40 minutes. transfer to a plate and enjoy!



i love it when we eat in because we all save money and eat a bunch. it was awesome being with my girlfriends and i'm ready to plan the next one :)
