i never really cooked that much when i lived back home, but during my first semester of college i've really grown to like cooking. overall, i think it's really fun and therapeutic. these are some of my favorite fall recipes from school and back home...
1. Key Lime Pie
ingredients -
four large egg yolks
four tsp grated lime zest
1/2 cup lime juice
one eagle brand sweetened condensed milk can
one and a quarter cup (about 8 - 9 pieces) graham cracker crumbs
five tbsp unsalted melted butter
two tbsp sugar
whipped cream
make the filling -
in medium glass bowl whisk your egg yolks and zest together approx. 2-3 minutes
whisk in the sweetened condensed milk
whisk in lime juice
set aside for 30 mins
make the crust -
heat oven to 325 degrees
put graham cracker crumbs, butter, and sugar in nine inch pie plate
press crumbs into pie plate creating crust
bake for 15-20 mins
pour filling into warm crust
bake 15-20 mins
cool and then chill for 3-4 hours
add whipped cream on top! i like to beat heavy whipping cream and then add a dollop of maple syrup into the mixer. yummy
2. Special Kix
ingredients -
half a box kix cereal
one quarter cup white sugar
cinnamon
half stick unsalted butter
make -
put butter in a skillet or pan
heat on medium low
after a few minutes, add in kix
stir with a wooden spoon until coated
once coated, add sugar and keep stirring
(opt.) add in more butter
after the sugar has caramelized, add cinnamon
3. Speecy Spice Egg Burrito
ingredients -
two eggs
butter
flour tortilla
salsa verde
sour cream
el yucateco green habanero salsa
salt + pepper
make -
line butter in a skillet or pan
heat on medium
crack in two eggs - over easy (or any style you like)
add little dash of salt and pepper
head up tortilla on stovetop (pan or aluminum foil)
spread thin layer of salsa verde and sour cream on tortilla
add eggs into tortilla
add more salt and pepper
wrap by folding bottom to top then enclosing burrito contents like a diaper...
fold in left side while holding burrito shape w other hand
then fold the right side
roll tightly from bottom to top finish burrito
4. Corn & Mushroom Scramble
ingredients -
vegetable oil
corn kernels
mushrooms
salt
pepper
various spices
jack cheese
make -
wash and cut mushrooms
in giant skillet line pan with vegetable oil
add in corn kernels and stir
add mushrooms into pan
sprinkle layer of cheese on top
add salt and pepper and spices to taste
