lemon cake recipe

one of my favorite flavors is lemon and this lemon cake is out of this world. this is my recipe for delicious lemon cupcakes -


* ingredients *

2 sticks unsalted butter at room temp

2 c white granulated sugar

4 eggs

1/3 c grated lemon zest

3 c flour

1/2 tsp baking powder

1/2 tsp baking soda

1 tsp kosher salt

3/4 c squeezed lem juice

3/4 c buttermilk

1 tsp vanilla extract


1. collect ingredients and preheat oven: place your oven at 350 degrees and line a cupcake pan with cupcake tins. collect all ingredients and start by collecting 1/3 c lemon zest and 3/4 c lemon juice


2. cream butter and granulated sugar together until light and fluffy. with mixer still on mix in eggs one at a time and then lemon zest


3. in a separate bowl combine flour, baking powder, baking soda, and salt


4. in another bowl combine 1/4 c lemon juice, buttermilk, and vanilla


5. add flour combo and milk combo alternately into the batter. start and end with the flour mix. at the end, add in the rest of the lemon juice slowly


6. separate batter into cupcake tins and bake for 10 - 12 mins, checking in on them occasionally



finally decorate them with frosting and enjoy
